The Pinon Martinez, Upstairs @ Campagnolo

Camp Upstairs is one of The Woods' favourite bars. Bartender Peter Van de Reep was an early supporter of ours, and we love this variation on a Martinez, a classic cocktail dating back to 1884 that's technically father to the Martini. The traditional Martinez recipe combines Old Tom gin, sweet vermouth, maraschino, and bitters; in Peter's take, tequila replaces the gin and our amaro steps on for the vermouth. The result is a smoky, strong cocktail with a hint of the woods (pinon = pine).

  • 1 1/2 oz. El Jimador Tequila Blanco

  • 1 oz. Woods Amaro

  • 1/4 oz. Luxardo Maraschino

  • 2 dashes Angostura bitters

Stir with ice, strain into a cocktail couple, and garnish with an orange twist.
